INGREDIENTS
5 Lamb loin chops
Salt & Black Pepper
2 Tbsp butter
3 Garlic cloves, crushed
1 tsp Thyme
2 tsp TOP CLASS Steak & Chops Spice
METHOD
Take the chops out of the fridge 20 - 30 minutes before cooking. Pat dry with a paper towel.
Rub the chops with salt, black pepper, and TOP CLASS Steak & Chops Spice. Add crushed garlic, thyme, and a little butter. Marinate for at least 30 minutes.
Heat a cast-iron pan over medium-high heat. Stand the chops upright on their fatty edges and sear for about 5 minutes until the fat is crispy.
Lay the chops flat. Cook for about 3 minutes per side until golden brown.
Reduce heat to medium-low. Spoon off excess fat, then add the butter, garlic, and thyme. Once the butter foams, spoon it over the chops for 1 minute.
Transfer chops to a serving dish and pour the garlic butter sauce over the top. Serve hot with sides of your choice.

Take the chops out of the fridge 20 – 30 minutes before cooking so they cook evenly. Pat them dry with a paper towel - this helps them sear better and get that golden crust!
