COOKING TIME: 35 Minutes
SERVES: 6 People
Tasty Potato Salad
INGREDIENTS
4 medium potatoes
1 Tbsp apple cider vinegar
½ cup sour cream
¼ cup mayonnaise
1 Tbsp mustard
½ medium red onion, finely chopped
3 celery stalks, finely chopped
1 medium gherkin, finely chopped
2 hard boiled eggs, peeled and chopped
¼ cup chopped coriander (optional)
Salt and pepper, to taste
2 Tbsp TOP CLASS Original Flavoured Spice Bowl
METHOD
Add the potatoes to a large pot and cover with water. Season with salt.
Bring the water to a boil, then reduce to a simmer. Cook for 15 - 20 minutes, or until they can be pierced with a fork.
Once cooked, let cool. Peel the potatoes (gently pinch the skin and pull it away).
Chop the peeled potatoes into small chunks, add to a large bowl. Add the vinegar and season lightly with salt.
Stir the sour cream, mayonnaise, TOP CLASS Original Flavoured Spice Bowl, and mustard in a bowl.
Add the mixture, onions, celery stalks, pickles, eggs, and herbs to the potatoes and combine.
Season with salt and pepper to taste. Serve and enjoy!
