Veg Fried Rice

SERVES: 8 people

COOKING TIME: 1 Hour

INGREDIENTS

  • 2 cups Basmati rice

  • 2 cups mixed vegetables (peas, corn, carrots)

  • 2 vegetable stock cubes

  • 3 Tbsp oil

  • 1 onion, chopped

  • 1 red pepper, chopped

  • 8 eggs

  • 5 Tbsp TOP CLASS Mild & Spicy Flavoured Curry Powder

  • TOP CLASS Original Flavoured Spice Mix, to season

METHOD

  1. Cook unsalted rice until soft & tender and set aside.

  2. Using a pot, fry onions in oil until glossy and then add the TOP CLASS Mild & Spicy Flavoured Curry Powder.

  3. Add the pepper, garlic and ginger.

  4. Add mixed vegetables.

  5. Crumble in the stock cube and the cooked rice.

  6. Stir every 15 - 20 seconds for 3 minutes, or until you notice the rice and veggies starting to brown.

  7. Remove from the heat and spoon into bowls.

  8. Fry up each egg and top each serving with a fried egg, seasoned with TOP CLASS Original Flavoured Spice Mix.

Give your rice extra flavour by adding soya sauce and chopped spring onion.
